CALIFORNIA

CABERNET SAUVIGNON

 

 · Grape Sourcing ·

Grapes for our wine were harvested from California’s cooler coastal climate vineyards, primarily the cooler growing areas of the San Joaquin Valley and Sacramento River Delta.  In these areas, warm days allow the grapes to ripen with complexity and richness of flavor, while cool nights preserve the grapes’ crisp acidity.

 

 · Winemaking ·

Grapes for this wine were handled gently to minimize bitterness and fermented warm to maximize color and flavor extraction.  The firm structure of the Cabernet was tempered with Petite Sirah, which adds richness and structure. The wine was aged for up to one year in new and used American and French oak.

 

 · Winemaker's Notes ·

Our Cabernet is a dark crimson color, with ripe berry and plum aromas, accented by toasty oak and vanilla. The wine’s crispness is balanced by rich, round flavors on the finish.  Suggested pairings:  Marinated flank steak grilled with garlic and onions, beef kabobs or wood-fire pizza with wild mushrooms and herbs.

CALIFORNIA

PINOT NOIR

 

 · Grape Sourcing ·

Grapes for this wine were sourced from California’s best growing areas for Pinot Noir in the Sacramento and San Joaquin Valleys.  The range of vineyards and growing areas creates a Pinot Noir that is crisp and complex yet approachable and luscious on the palate.

 

 · Winemaking ·

Grapes for this wine were gently squeezed, and cold soaked for up to 5 days prior to fermentation. A portion of the blend was fermented in open topped containers to soften tannins and provide more intense color and flavor extraction.  This component was aged for 6-8 months in a combination of new and 1-2 year old French oak barrels, adding layers of toastiness, and complexity to the wine. The remaining portion of the blend was cold fermented in stainless steel to preserve the berry fruit characteristics and crisp acidity.

 

 · Winemaker's Notes ·

Fragrant cranberry and red raspberry aromas carry through to the palate.  Fruit forward in style, this Pinot Noir is jammy with notes of green tea, cedar and spice with a silky smooth finish.  This Pinot Noir wine pairs well with light pasta dishes, grilled salmon or roasted chicken.

CHARDONNAY

Our winemaker selected grapes from vineyards across California’s best growing regions, primarily from the coolest growing areas of the Sacramento River Delta and San Joaquin Valley, as well as vineyards in the North and Central Coasts.   Grapes harvested from a variety of vineyards and areas each provide unique flavor components, creating a balanced, complex and harmonious wine.

 

 · Winemaking ·

Grapes for this wine were harvested during cooler night and morning hours to highlight the crisp, balanced fruit flavors in our wine.  After crushing, the must was fermented for up to twelve days at cool temperatures, around 60 degrees Fahrenheit, in stainless steel tanks with Burgundian yeasts.  A portion of the blend went through malolactic fermentation, adding a silkiness and body to the wine.  A splash of Muscat adds floral notes and richness to the blend, while a touch of Sauvignon Blanc enhances the crisp citrus flavors.

 

 · Winemaker's Notes ·

Ripe pineapple, golden apple and Anjou pear flavors are balanced by citrus notes and a smooth, creamy finish.  The wine would be a heavenly match with smoked chicken salad with apples and walnuts, four-cheese pizza, calamari fritti, or Moo Shu pork.

Grapes for our wine were harvested from California’s cooler coastal climate vineyards, including the cooler areas of the Central Valley, the Central Coast’s Monterey AVA, and North Coast vineyards in Napa, Sonoma and Suisun Valleys.

 · Winemaking ·

Grapes for this wine were harvested during cooler night and morning hours to highlight the crisp, balanced fruit flavors in our wine.  After crushing, the must was fermented for up to twelve days at cool temperatures, around 60 degrees Fahrenheit, in stainless steel tanks with Burgundian yeasts.  A portion of the blend went through malolactic fermentation, adding a silkiness and body to the wine.  A splash of Muscat adds floral notes and richness to the blend, while a touch of Sauvignon Blanc enhances the crisp citrus flavors.
